Ingredients
Chana Dal - cup (boiled)
Yam - cup (diced)
White Pumpkin - cup (diced)
Red chili Powder - 1 tsp
Turmeric Powder - tsp
Grated and fried Coconut - 2 cups
Grated Coconut - 1 cup
Jeera - 1 tsp
Mustard Seeds - 1 tsp
Few Curry Leaves
Jaggery - 1 piece
Coconut Oil - 1tbsp
Salt to taste
Preparation
Boil Yam, White Pumpkin, red Chili powder, Turmeric
powder and Salt in a pan with 1 cup water. To this add the boiled Dal
and Jaggery.
Next, make a paste of grated Coconut and Jeera. Add
this paste to the above preparation. Boil this for 5-10 mins. Remove
this pan from the flame once it boils.
In a frying pan fry the Mustard Seeds and Curry Leaves
with Coconut Oil. Pour this over the curry. Add of the fried grated
Coconut and use the remaining to garnish.
The Kootu Curry is now ready to be served hot. |
